Abstract

Akway (Drimys piperita Hook f.) is an aromatic plant tthat was included in family of Winteraceae. This plant is a traditional medical plant of Sougb tribe who leaved in Arfak Mountains, West Papua to heal malaria and to enhance  vitality.. The aims of the research were to determine in vitro antibacterial activities of hexane extracts of akway barks and antibacterial stability of extracts on some levels of pH, heating and sodium chloride  concentrations also its potency as food preservative. Hexane  extraction of akway bark powder was performed  using maceration method for 3 days. Antibacterial activity assays of  extracts were done using method of agar well diffusion on four species of bacteria including Escherichia coli ATCC25922, Pseudomonas aeruginosa ATCC27853, Bacillus cereus ATCC10876 and Staphylococcus aureus ATCC25923. The result indicated that hexane extracts of akway barks inhibited growth of E. coli, B. cereus and S. aureus at  minimum inhibitory concentration of 0.35-0.89%. Extract was resisten on heating temperature of 100°C  for 25 minutes and sodium chloride concentration up to 5%. The Treatment of pH 4 and pH 8.5 increased antibacterial activity of extracts.
