Abstract

Saponin is a type of glycosides that are found in plants and are complex which has the characteristics of foam, so that when reacted with water and shaken it will form foam. Boiling may also reduce the compounds considered unnecessary in the material, especially to water-soluble compounds, while steaming is a cooking process with a medium of hot water vapor produced by boiling water. This study compared boiling and steaming. The results obtained concluded that steaming has a positive effect on the parameters tested.
